I decided to make an allergy free Blueberry Buckle. It is delicious and easy to make.
Top in a glass pan, first crust, then blueberries and after that the topping.
Bake for 25 minutes. Allow to cool slightly and enjoy.
Blueberry Buckle Recipe
1/4 cup Melted Coconut Oil
1 cup Corn Flour
3/4 cup Brown Sugar
1/4 cup Salt
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Xanthan Gum
Mix together well. Press into a greased 9x9 inch pan.
Layer with 2 cups of Blueberries
Topping:
1/3 cup Corn Starch
1/4 cup White Sugar
1 tbsp Cinnamon
1/4 cup Melted Coconut Oil
Stir together until crumbly. Sprinkle on top of blueberries.
Bake at 425 for 25-30 minutes until slightly browned.
