Zucchini Veggie Pizza


A perfect allergy friendly pizza is the Zucchini Veggie Pizza. It does contain eggs and cheese although you can substitute the cheese for a dairy free variety if you need too.

Preheat oven to 400.

Crust:
1 extra large Zucchini or 2 medium Zucchini
1 egg
1 cup grated cheese of your choice.

Grate Zucchini or use a food processor. Mix egg and cheese together with Zucchini. Spread on greased pizza pan.

Saute sliced mushrooms, peppers, onions, garlic and tomatoes in olive oil. Scatter over crust.

Sprinkle with Oregano, salt and pepper.

Bake at 400 for 30 minutes. Enjoy your healthy pizza.
